Glucose syrup is often used as a synonym for corn syrup, since glucose syrup is most commonly made from corn starch. Glucose syrups have a Dextrose Equivalent (DE) of above 20. High DE values indicate more completely hydrolyzed products and thus stand for increased sweetness and lower viscosity.
