Glucose syrups have a Dextrose Equivalent (DE) of above 20. High DE values indicate more completely hydrolyzed products and thus stand for increased sweetness and lower viscosity.

Description

Glucose syrup is often used as a synonym for corn syrup, since glucose syrup is most commonly made from corn starch. However, technically, any liquid starch hydrolysate of mono, di, and higher saccharides can be glucose syrup, and can be obtained from any starch source, mostly wheat, rice and potatoes. Glucose syrups are consistent, soluble, pure and non-irritating, and offer highly versatile functionalities and cost effectiveness suitable for a number of different applications.
